The halls are decked, the season is jolly, it's time for tidings of joy in the good old traditional Kiwi way.
Nothing beats sunshine and a backyard BBQ with our nearest and dearest to celebrate the festive season with Christmas Cocktails and Christmas Cheers!
Introducing: The Foreshore Paving '12 Cocktails of Christmas'!
1. Pear Treacle Cocktail Recipe
The Treacle, both the classic recipe which uses rum and cloudy apple juice, and this one, are the perfect accompaniment to Christmas ham and turkey. The fruit flavours and spice notes are as decadent as a mince pie. Delight your Christmas guests with this cocktail.
Ingredients 60mL Whisky 30mL Pear juice 10mL Simple syrup
Method Stir all ingredients in a mixing glass with ice. Strain into an ice filled glass. Top with more pear juice and garnish with pear slices.

2. Margarita Cocktail Recipe
Although synonymous with all things Mexican, the exact origins are unclear with both sides of the US-Mexico border taking credit for the Margarita's creation. Perhaps the most plausible story is that of circumstance: streams of Americans travelling across the border into Mexico during Prohibition, ordering the popular Daisy cocktail... but brandy was substituted with tequila. The bigger mystery is the salt rim... will your Margarita be shaken, on the rocks, or frozen?
Ingredients 45mL Silver Tequila 30mL Fresh lime juice 15mL Cointreau
Method Combine ingredients with ice in a shaker and shake. Strain into a chilled glass (with or without ice).

3. Moscow Mule Cocktail Recipe
To get a sense of what it’s like to be close to all that good cheer around the North Pole, you can’t beat a Moscow Mule. Take some vodka, a splash of lime and throw in some ice. Now here’s the kicker - ginger beer. Then add one more splash of lime. You now have one Christmas drink that even Saint Nick would approve of.
Ingredients 50mL Vodka 20mL Fresh lime juice 120mL Ginger beer
Method Pour Vodka and lime juice into an ice filled glass. Add ginger beer' stir and garnish.

4. Negroni Cocktail Recipe
The general rule most bartenders first learn of cocktails is that of the 3 S: Sweet, Sour, Spirit. This is why most classic cocktails including a sugar syrup (sweet), lemon/lime juice (sour), and alcohol (spirit). The Negroni sticks to that same rule, but in a different way, sweet Vermouth (sweet), Campari (bitter, as variant of sour), and Gin (spirit). It's a cocktail, and a very Italian one at that. Impress your friends and family with a Negroni.
Ingredients 30mL Gin 30mL Campari 30mL Sweet Vermouth
Method Stir ingredients in a mixing glass with ice. Strain into an ice filled glass and garnish with an orange zest.

5. Mai Tai Cocktail Recipe
Of all of the bar culture, nothing is as colourful and flamboyant as Tiki. Founded in California in the 1930s, this wistful Polynesian hybrid, that specialised in rum based drinks had two instrumental characters - Don the Beachcomber, in Los Angeles and Trader Vic, in Oakland. Both of which, for many years, had a rivalry over who created the Mai Tai (it's now pretty undisputed that it was Trader Vic).
Ingredients 30mL Dark Rum 30mL White Rum 15mL Fresh lime juice 20mL Orange Curacao 10mL Orgeat
Method Combine ingredients with ice in a shaker and shake. Shake for 10 seconds and pour into an ice filled glass.

6. Pisco Sour Cocktail Recipe
Although both Chile and Peru claim this drink as their own, the spirit Pisco and the recipe differ. In both countries, Pisco is distilled from grapes, just like grappa or marc. In Chile, it's then aged in oak barrels, while in Peru, it's bottled fresh after distillation. The Peruvian Pisco recipe calls for Pisco, key lime, sugar syrup, egg white and bitters. The Chilean version uses Pica lime and omits the egg white and bitters. You'll love creating the Pisco Sour, whatever your preference.
Ingredients 60mL Pisco 20mL Simple syrup 20mL Fresh lemon or lime juice 1 Egg white 2 dashes of Angostura Bitters
Method In a cocktail shaker, combine Pisco, simple syrup, lemon juice and egg white. Shake vigorously (dry shake). Add ice and shake again. Strain into a glass and dash with bitters.

7. Daiquiri Cocktail Recipe
Most of the world has a synergy with rum. Although it has tropical connotations, there are rum distilleries found everywhere from the Rocky Mountains, to landlocked Hungary (where they add tea to it), Japan and more.
Originally this drink was built in a glass full of cracked ice. Then the electric blender came about and into the bar. Today the Daiquiri is best appreciated as a delicious shaken cocktail. This is a great cocktail to try at home!
Ingredients 60mL White Rum 25mL Fresh lime juice 15mL Simple Syrup
Method Pour the ingredients into a shaker with ice cubes and shake well Strain into a pre-chilled glass Serve straight-up without ice.

8. Espresso Martini Cocktail Recipe
Didn't think the 80s produced a decent cocktail? Dessert, coffee, and after dinner drink all in one, the Espresso Martini truly is a perfect summer dessert.
Although cocktail enthusiasts lament the 80s as a dreadful era for the cocktail - pointing at brightly coloured, flavourless sugary drinks - there were some great bartenders. Among those, London based Dick Bradsell, creator of not only the legendary Espresso Martini, but the Bramble and the Treacle too.
Ingredients 30mL Vodka 30mL Espresso coffee 15mL Coffee liqueur 15mL Simple syrup
Method Combine all ingredients in a cocktail shaker with ice. Shake vigorously. Serve in a Martini glass. Garnish with coffee beans (optional)

9. El Diablo Cocktail Recipe
The name may mean Devil in Spanish, but this heavenly drink is a great way to showcase the fact tequila is not a one drink wonder. Another of the ingredients in the El Diablo cocktail is Creme de Cassis (black currant liqueur), it's worth investing in as it's also the defining ingredient in Kir Royal, and it works well as a light spritzer with soda too.
The El Diablo is an outstanding summer cocktail that could get even the staunchest tequila critic to rethink their stance. Don't be scared off this devilish cocktail.
Ingredients 50mL Tequila 10mL Crème de Cassis 15mL Fresh lime juice Ginger beer to top
Method Add Tequila and lime juice into a cocktail glass. Add ice and top with ginger beer and add Crème de Cassis. Squeeze half a lime for the garnish.

10. Gimlet Cocktail Recipe
Sugar, lime and alcohol is a classic cocktail trinity - think Margarita, Daiquiri, and of course, the Gimlet. Try your hand at the Gimlet cocktail...
Ingredients 60mL Gin 20mL Fresh lime juice 15mL Sugar syrup 2 dashes of Bitters (optional)
Method Shake all ingredients. Serve into a chilled cocktail glass.

11. Manhattan Cocktail Recipe
As quintessential as a Martini without the ambiguity of where it came from, this classic cocktail was invented in 1890. During Prohibition (1920-1933), no American Whiskey was being made so Canadian Whiskey was used instead.
Ingredients 45mL Bourbon Rye or American Whiskey 15mL Sweet Vermouth 2 Dashes of bitters
Method Combine ingredients in a mixing glass with ice and stir. Strain into a chilled glass and garnish with a cherry or orange zest.

12. Aperol Spritz Cocktail Recipe
For a country that loves La Dolce Vita (the sweet life), the Italians love bitterness in their drinks. The Aperol Spritz is one of those classic drinks that dates back to the 1900s and has a perfect balance between sweet and bitter, fresh and light.
Ingredients 90mL Prosecco 60mL Aperol Aperitivo 30mL Soda water Slice of orange
Method Combine Aperol Aperitivo and soda water in a glass. Add ice and top with Prosecco. Stir well and garnish with orange slice
